Clitoria ternatea in Latin, ดอกอัญชัน "dok anchan" in Thai, சங்கு பூ "sangu poo" in Tamil for conch flower, ശംഖുപുഷ്പം "shamkhupushpam" in Malayalam and many other names for this plant with many virtues. It is an Ayurvedic flower with multiple benefits with a refined vegetal taste. Known today throughout the world as blue tea or blue matcha.
Clitoria ternatea flowers contain antioxidants, flavonoids and cliotids that are beneficial for our health.
It is used in herbal tea, most often drunk cold in Asia, it is found in cooking in both savory and sweet dishes such as pulut tai tai dessert (blue rice with coconut), in cocktails, smoothies and milkshakes. You have enough to be inventive to give color to your small dishes and preparations, do not hesitate to add a little lemon to change its color from blue to purple or even pink depending on the acidity of the pH.
